Both CEBAS and IATA belong to CSIC. CEBAS’s main activity of the group is focused on research on the relation between plant food components and human health, in order to produce fruits and vegetables, and derived high quality foods that are healthy, safe, attractive and convenient for the consumers. To this end the biological activity of food components and their potential use in the development of functional foods and nutraceuticals is evaluated and technologies and procedures to guarantee quality and safety of foods attractive to consumers are developed. Producers are advised with scientific and technical knowledge required for the production of these foods. The Instituto de Agroquímica y Tecnología de Alimentos (IATA) and is well known for all its contributions to food science and technology. It is the oldest Institute in Spain devoted to food technology. The participating group has excellent qualifications and very good experience on the proposed matter, especially in the biochemistry of foods of animal origin, especially on quality and nutritional properties of meat and meat products.
Main roles in BACCHUS:
WP2: Characterization of Ellagitannins, ellagic acid and the bioavailable ellagic acid gut microbiota metabolites, urolithins.
WP3: data evaluator; polyphenol analyses and data evaluation.
WP4: Identification of the metabolic profile of the volunteers in the clinical studies with Ellagitannins, and identification of the microbiota responsible for urolithin production.
WP6: Clinical intervention study with pomegranate and other extracts rich in Ellagitannins with evaluation of CV health biomarkers.
WP1: Member of Health Advisory Committee.
WP2: validation of accurate methods for the assay of antihypertensive and antioxidant activity of peptides isolated from processed pork meats; assay of antihypertensive activity in peptides isolated from cereals and dairy foods by other partners.
WP3: data evaluator for meat bioactive peptides for eBASIS.
